Masala Chai

Orange pekoe tea can be found at most Indian shops. In Bellingham, you can find Indian shops here. In Bellingham, the easiest place to find whole cardamom is The Community Food Co-op.

For two servings:
2 c water
1 tbsp grated ginger
Pinch crushed fresh cardamom
2 tbsp loose orange pekoe tea or other loose black tea like darjeeling
1 tbsp sugar
1 1/2 c milk

*Heat water and add ginger, cardamom, tea and sugar over medium-low heat
*When tea is simmering, add milk
*Let sit over medium-low heat for a few minutes
*Strain into mug and enjoy

I like a lot of ginger and sugar in my chai, but feel free to add more or less of each ingredient to fit what you enjoy! You can also add cinnamon stick or cloves for extra flavor.

    We made this with soy milk and it turned out great! We also added a touch of orange peel, cinnamon, cloves, & black pepper. Delicious!! We’re making it again tonight and I’m going to try using large tea bags so I don’t have to strain it. We bought some larger tea bags from a local tea shop and I think they will be big enough to hold all the loose pieces.
